Qhepa – Fair Trade Organic Chocolate Premiere

Whisper Chocolate will debut Qhepa, their new line of fair trade organic chocolates, on Earth Day weekend in downtown Geneva. A free in-store tasting event on Friday, April 20th from 6:00PM to 8:00PM will offer the public a sneak peek at the Qhepa collection. The full product line will become available for purchase exclusively at Whisper Chocolate’s retail store at 444 Exchange Street on Saturday, April 21st.

 

“In the Peruvian native language of Quechua, ‘qhepa’ means ‘moving toward a former time or position’,” said Jasmine Mead, co-founder of and head chocolatier at Whisper Chocolate. “The name honors the rich tradition of chocolate making in South America and gives a nod to a Qhepasimpler era of farming.”

 

Featuring 65% semisweet and 72% bittersweet chocolates, all Qhepa chocolate is produced with beans originating in Costa Rica, the Dominican Republic, or Peru, from farmers’ cooperatives that are certified organic and fair trade. All other ingredients are certified organic, and from local sources when possible. In addition, Qhepa products are packaged with biodegradable cellophane and recycled labels and ribbons.

 

Free samples of both Qhepa and European chocolates will be available to guests at the in-store tasting, along with fair trade organic coffee from Mother Earth’s Natural Foods in Geneva. The full line of Qhepa products, including bark and truffles, will debut on Whisper Chocolate’s shelves the following day.

 

“We’re excited to be the first artisan chocolatier in the Finger Lakes to offer a line of fair trade organic chocolate treats,” continued Mead. “We believe that our customers who desire a vegan, soy-free, earth-conscious alternative will be excited, too.”

One exciting feature is the option to pick up your order in our Geneva shop. So, if you see something you like online and you live nearby, you can purchase it online and come pick it up yourself. That way, you’ll never miss your favorite flavors!

 

The online shop is also a way to see what’s available in our store, since we’ll be updating online throughout the day. But since we’re always making new flavors and products, some might not be available online. Check our Facebook page to see what in-store products we have on a given day!

 

A Brand New Year

It’s 2012!

A lot has happened in the past year here at Whisper Chocolate. We opened our doors on July 15th and held our Grand Opening on October 1st.

Perhaps the biggest thing that happened this year at Whisper Chocolate is when co-owner Linda was diagnosed with a brain tumor in November. Though we had to drastically reduce hours and production during the holiday season, you showed us support and encouragement. We thank you for all the kind words and support you’ve given us during the past two months.

Please be patient with us as we continue to struggle with finding the right balance here at the store. Our hours will continue to expand, as will our product lines and offerings.

Valentine’s Day is just around the corner, and Whisper Chocolate will be filled to the brim with new chocolate bars, barks, and truffles for the holiday.

Thank you again for your support and understanding. As a small local chocolate shop, we’re blessed to have such a loyal and kind customer base. Thank you.

Fall at Whisper Chocolate

Fall is here in the beautiful Finger Lakes! We are looking forward to a few fabulous events coming up in the next few weeks.

First, we will be represented at the Finger Lakes Cork & Fork Saturday, September 17th at the Finger Lakes Community College table. Please stop by and try a sample of our fresh truffles.

Next, we will be offering samples at Ventosa Winery’s 6th Birthday bash on Sunday, September 25th.

And last, but not least, we will be hosting our our Grand Opening on Saturday, October 1st from 11am-3pm at our new store. All are welcome to stop in, try some samples of our freshly made chocolates, and enter a drawing for a $25 gift certificate. Posing for our ribbon cutting is optional!

What is Tempering? Part 2

So, tempering is the process that makes chocolate crisp, streak-free, and stable. But what is tempering, exactly?

First, the chocolate is melted down and brought up to a temperature between 100 and 120 degrees (depending on the type of chocolate). Then the chooclate is cooled down to between 79 and 84 degrees, and then heated up again to 82 to 89 degrees. At this point, if all the conditions were right, the chocolate is tempered and ready for the chocolatier.

There are several factors that detirmine if the chocolate was tempered correctly – temperature and humidity are the two biggest ones. Ideally, the room the chocolate is being tempered in should be 68 degrees and less that 50% humidity.

So, on days when our air conditioning can’t keep up with the soaring temperatures outside, or on rainy days when the air is laden with water, our tempering process is thrown off. We do our best to regulate these outside influences by running an air conditioner and dehumidifier even on nice days.

What is Tempering? Part 1

If you visited us last week, you probably noticed our shelves were a little depleted. While it was almost 100 degrees outside, our little shop was a comfortable 72 degrees. And yet, we claimed it was too hot to make chocolate! This past Friday, our chocolate machines were once again quiet, even though we’re still trying to stock as quickly as we can! Why is that?

Chocolate is as delicate as it is tasty. The most complicated part of being one of Whisper’s chocolatiers is making sure the chocolate is smooth, shiny, and a uniform color. Those properties come from a process called ‘tempering’.

Chocolate that has not been tempered or tempered incorrectly melts almost immediately in your fingers. It doesn’t give the satisfaction of a loud snap when you break it or bite it. Often untempered chocolate looks streaky, splotchy, or dusty. Although it still tastes yummy, it’s a hassle to eat when it melts all over your fingers. It doesn’t look very appealing, either.

Tempered chocolate is stable enough so it doesn’t immediately melt all over your hands. It’s a uniform color, smooth, and has an attractive sheen. It breaks in a clean

line with an audible snap. And although it tastes the same as untempered chocolate, the texture is much smoother and creamier.

So what makes the difference? It has to do with temperature, humidity, and lots of patience on the chocolatier’s part.

Getting Closer

We’ve been busy at work at 444 Exchange Street for the past few weeks, finishing up our new kitchen. We’ve recently hung up our posters in the windows, and posted ‘Opening Soon’ signs. Before we know it, Whisper Chocolate will be open and full of chocolate confections!

We’ll be sure to keep you updated as we finish up construction and get closer to our opening date.
